I accidentally included my TV shows to the library.

In Jarvis and lower if I remember correctly I could right click them and excluded them or edit source.
In 1.7 there is no rightclick options to do that.

So how do I remove sources that are added to the library?
Do I miss anything here?

Ok, now suddenly there is this option in the submenu. I was too quick I gues.
Solved.

Hit 'c' on a keyboard if you have one.
Or however else you'd bring up the context menu.
Then 'change content' to 'none' - but you knew that.

I found another "thing":
When I make a movie set and want to move an episodes to it, the newly made movieset is not displayed in the movieset list. So I can not add to it.

No idea, sorry - I do all that outside kodi.
Did 'c' work?

'C' indeed works to bring up the context menu.

Now I know why there was no 'manage' option in the context menu...it was because the library was updating ......
Everything fine now.
