Is it possible to remove the overlay images when fanart mode is turned on for movies and TV in the home screen so only the fanart shows?

probably yes, though it would require quite a few changes i guess.
it's all coded in Includes_Home.xml, so if you're interested in having a go at it, you now know where to look. ;-)

btw, why not just use the 'Multi Image' option instead of 'Fanart'?
you can select your cached fanart folders (../userdata/Thumbnails/Video/Fanart) and that should get you what you're after.
