Thanks Jezz_X. It is as simple as leaving the most current default Textures.xbt intact, modifying IncludesCodecFlagging.xml and placing custom images in the media\flagging\video\ directory.
As for iTunes content and DRM, I originally wanted xbmc to show a flag for web-dl content (which is iTunes sourced video with DRM removed). Now that I fully understand how flagging works, instead of using the iTunes logo, I created a custom WEB-DL logo. I have included it below in case anyone else would like to use it.
