Is it possible to copy all my SKIN/VIEW settings etc. from my Windows XBMC box to my new ATV2 XBMC ??

Yes, just copy the userdata folder from your Windows PC to the ATV2. Note that this only makes sense if the sources are the same on both. See http://wiki.xbmc.org/index.php?title=Profile for details.
