I am running XBMC (the dedicated linux distro) over an old TV via an old laptop that doesn't have HDMI ports. It has a 7 pin S-Video port, but the TV only has the older 4 pin port version. The end result is probably the lowest possible image resolution you can get. My guess is 420 by 3-something, it doesn't really matter. I can't even set the XBMC laptop to a resolution that low to match the TV.

For movies it is fine. Things look a little pixelated, but you get used to it. What's impossible to use though is the XBMC GUI. The fonts at this resolution are just too small, too pixelated to read. Is there anything we can do to make the GUI a bit bigger or more readable? It would help a lot. Thanks.

Use a skin with larger fonts. There's various touch based skins that might do the trick, else you will have to modify one yourself.

I tried the Touched skin, but the text still gets too pixelated.

I found out that XBMC was released for Android not too long ago: http://xbmc.org/theuni/2012/07/13/xbmc-for-android/

Would it be possible to use the skins that come for that, or are we talking about too different hardware here?

Thoose will be the same skins.
It will get an optimized skin like for the Nexus7 however it won't help that much for an old CRT tv
Those 'old' things are just outdated
