I have an intel mac mini which has a Crystal HD card installed, got xbmc running fine but tbh I don't need the functions of it being a pc and using unnecessary resources.

So if I were to install xbmc live/ubuntu does it contain the drivers for the crystal card?

I need it to boot straight into xbmc then its nice and easy for the mrs to use.

Cheers

I'm not sure off-hand if XBMCbuntu comes with Crystal HD drivers, but if it doesn't then it was easy to install them, because I did that a little bit ago and it worked great. XBMCbuntu or OpenELEC (wiki) are both good options and it's easy to have a fully working BCHD on either.

Honestly, the xbmclive distro using openbox/lightdm as the window manager is so lightweight that the "functions of it being a PC" don't really use unnecessary resources. If you want to be really really minimal, you could install ubuntu minimal, add the XBMC repo, and compile from source with just the stuff you need...
