I am trying to figure out how to create a xbmcbuntu iso myself so I can customize it update drivers etc and then use that to PXE boot the image.

However I can't find any guide to build it from scratch?

Clone the xbmcbuntu repo and run sudo ./buildWithOptions.sh.
Have a look at buildWithOptions.sh to find out the build options.
