I've been using the Aeon Nox 4.1.9 : Showcase mod and have always had my movie sets next to each other in the showcase list like below but i see some people are able to group them into one single case so they would have all the American Pie movies shown in one collection case. How is this done?

Aeon Nox 4.1.9 is able to display up to 6 discs for a movie set.

Right i've got my Die Hard Collection together and in the one box but when the box opens no discs roll in to it. How do i get this to happen?

You have to use Coverflow to get DiscArt rolling into case for movieset, it's a known bug but I don't know how to fix it :S
