Which settings give the best video quality?
In relation to this I read somewhere that activating the post processing doesn't help but make the image worse...is it true?
Thanks !

Best quality is default... that was easy. Keep in mind that some encodes are handled differently than others and tweaking of video cards or drivers can change appearances or perceptions. While contrast & brightness base lines can be wild if you didn't do the encodes personally. Note: Kodi has the ability to use external players, should the default player not to be to your taste, although it works for me.
Massaging the digital bits usually becomes a mess, but things like brightness contrast etc can be tweaked to encompass constant graphic card or display deficiencies without a processor penalty.
