After setting up ServerWMC on my Win7 PC, would I still be able to use the Microsoft WMC GUI (e.g. schedule and view recordings, watch live TV if the tuner is not in-use, etc.).

Yes, absolutely. Using ServerWMC does not impact your ability to use WMC at all.

And you keep it all in Kodi by installing the WMC pvr addon. Some skins are better than others in regards to EPG, series recording, etc.

That's awesome because I am not quite ready to pull the plug on the native WMC GUI and all my WMC extenders (XBox'es). I plan to run Kodi clients and WMC extenders in the same network.
