Through this guide I have managed to get a dualboot up and running with ChromeOS and Chrubuntu: http://www.extremetech.com/computing/132...s-device/2.
In this guide, rather then replacing the firmware, it is recommended to switch the original BIOS to dev mode. This seems to be sufficient to enable dualboot.
Does that mean that it should now be possible to run a generic OpenElec build on the unit, or would that still require a custom firmware to be able to install and run?
no, ChrUbuntu on that device is still booting a ChromeOS kernel, it's not using the legacy BIOS because it doesn't have one. If you want to run OpenELEC, you need the legacy BIOS to boot it, which means you need to install a custom firmware.
