Kodi 14.1 installs okay on the old Mac Mini, currently connected directly to the TV.

14.2 didn't want to install.

Is this machine too outdated for add ons to work now, or is it a case of searching for developers still supporting this setup?

Any recommendations for add ons that might work?

14.1 is the last version which works on 10.6.8 - all later versions need osx 10.7 at least due to updated development tools from apple.
