NFS is most certainly the protocol you want to go for as it's one of the fastest ones ;)
I've been using NFS on both 2,4 Ghz and (now) 5 Ghz networks and haven't had any issues.
Streaming 1080p movies only. Never tried any fancy 4k stuff but I expect it work just fine (seeking might
take a little longer but don't quote me on that)
