Is there a way that I can easily see the number of channels when browsing albums and songs in my music library? It would also be helpful to be able to see the sample rate. Thanks!

It's a great request but unfortunately not possible. That info is only available at playback time so it's not scraped in the database or something like with the videos database.
The only solid way of doing this is that the Kodi music scanner reads this info into the database so it would be a request for Kodi itself, not the skin.
