How do I make kodi install the dependencies, after changing addon.xml? Do I need to reinstall it in some way?

That is how I usually do it (reinstall).

I never noticed you have to do anything... Just close/open Kodi and it worked....

dependencies are only checked during install time.
so either you'll have to do a version bump and re-install
or install the new dependencies manually.
