I have the set of 'Only Fools and Horses' which I've ripped to MKV files, one for each episode. I've organised these as per the listing on the TVDB.COM so that there are 8 folders: one for each of the series 1 to 7 and one for specials (series 0).

As the specials were aired at various times, spaced in between the series or after, how can I ordered each show to appear in chronological order, instead of Series 1 to 7 and then Specials

At the bottom of the TVdb all episode listing page you will see "Aired Order | DVD Order | Absolute Order " if one of these lisisting order is not to your liking you can either take this up with the TVdb (recommended method so everyone will benefit) or rename the numbers to fit, and lastly replacing "S01E01" etc with air date "1991-01-20" will work.

Minor detail I missed is that the scraper settings contains DVD vs Absolute Order.
