Is this possible?

I.e. if I do all the media library updating, download thumbnails etc. on PC, can I then copy this to the Xbox?

Welcome to the forums. There's two ways to do it. First is to just make sure all the paths are the same on each machine and then copy the userdata folder over.

The second way is to export your library information to individual files (either from XBMC directly, or using one of the third party applications that collect library information for you). This places all the info and thumbs next to your media files, so when XBMC scans, it'll just use the local info.
