Can you only stream onto the Apple TV or is there a way to copy films (AVI,MKV... etc) onto the Apple TV?

You can do it through SSH.

Once you installed XBMC and enabled SSH on AppleTV (following tutos that you can find online), you can connect throught ssh to your AppleTV with a software like FileZilla.

sftp://IP-of-your-appltv
Login : frontrow
Password : frontrow

After, just drag and drop your files, ...

How do I enable SSH?

Using this tuto http://wiki.xbmc.org/?title=XBMC_for_Mac_on_Apple_TV will enable the SSH.
