I'm new to XBMC. Is there any way to just use the regular windows mouse pointer in XBMC?

The image used is skinnable - you could alter Pointer.xml to point at some other image file, and add that image file to the media/ folder of your skin.
As I think you probably realize, the mouse is not the really the way it's designed to be used - it's designed to be used fullscreen with a remote of some kind.
