Is there a way to not have the subtitles on movies play by default? Everytime I play a new movie it alway plays with subtitles. I would like all movies to play without subtitles by default.

Yea. You can use the player menu (press "m" during playback) and set "show subtitles" to off. Then you can tell XBMC to use those settings for all videos.
