Subtitles are automatically on for any of my MKVs that have embedded subtitles. Is there a way to default this setting to off?

Go into the audio setting from the onscreen player controls. Turn off subtitles there and check the box for "Make settings default for movies"

This is something that really should be in the settings page. The fact that some settings can be changed only when playing a file is counterintuitive.
