Settings -> add-on -> Get add-ons -> install from zip

and when putting them in private/var/mobile does it matter if its in applications, library, media or updates?

Just in private/var/mobile will do. That is the folder that xbmc will look in (called mobile) when you try to install from zip.

Also first time installing / jailbreaking my ATV2.

Apple TV Software: 5.0
OS Build Version 5.1

Downloaded Seas0npass: http://files.firecore.com/SP/Seas0nPass.zip

All seems to be working fine (After tethered boot)- the only noticeable difference appears to be the apps.

There is a difference in the apps they have vs. mine. Most notably I do not have the "browser" and my settings icon has a "FC" skin rather then the typical "gear" (As they have shown). I am not to worried about this, I'm sure it's just due to a difference in the version from when their screenshots were taken, and the version I have running, or the fact that I have a Canadian version or something. I just included this info in case it is important, though I'm sure it's not.

Looked around for xbmc instructions. Followed these here:

I didn't notice any errors, but there was no apparent change on my ATV2.

Same story. Appeared to go through without errors, however, once again no change on ATV2.

Then found this thread. Read through... appears to be similar to my issues to figured I'd post here seeking advice. In the mean time I stumbled across this:

But once again, no luck (Same thing). Sorry for the mess of a post, I'm simply trying to give as much background info as I can. I hope I haven't left out anything which would be necessary in figuring out what's wrong / steering me in the right direction. Help is appreciated.

The FC logo will only appear for a while to show it is jailbroken. Then it will go back to the normal settings logo. As you are on iOS5.1 you will need to download the specific build and follow these instructions line by line and letter for letter: http://forum.xbmc.org/showthread.php?tid=127369
