Has anyone seen a list of working video plugins for AppleTV2? Or are the ones I can add right from XBMC the only working ones? It would be nice to have a sticky for currently working plugins. Thanks.

Just about all of them work fine. I know a few on BlueCop's 3rd party repo give me some problems (TBS, trying to watch Conan, never seems to work right), but I've yet to have a problem with any of the video plug-ins in the main repo. There are some that won't work simply because of the platform they are on, like the Netflix one won't work because it's designed to launch Internet Explorer from within XBMC, and there's obviously no IE in iOS (or silverlight for that matter. However, I bet someone could make it launch the official iOS Netflix player, but that's another matter.)
In short, everything should work and if it doesn't it's probably just a bug waiting to be fixed.
