I have two apple tv 2's. I installed xbmc on one of em over a week ago and installed xbmc on the other one a few days ago. The latter one has no skins in the add-on section. (I dont know why, but I see that a few people have been having the same issue)

my question is.... Could I ssh into my first apple tv and copy the skin from that one somewhere... then ssh into the other one and paste it in?... and if so... where do i find the skin through ssh?

Yes, you should be able to copy from one to the other. You'll find the skins under
/private/var/mobile/Library/Preferences/XBMC/addons/
