I've tried a couple of themes of my ATV2 but have found them to be quite slow
For example AEON MQ3 - its a great theme but is very slow on the ATV2
I'm currently using PM3.HD which works perfect on the ATV2
I just fancy a change

i personally think cirrus is the most responsive and loads thumbs and fanart almost instantly

I'm using Night and love it after trying everything else. Suits my needs perfectly.
My favorite is Alaska revisited, it runs smoothly after a couple of optimisations and it looks very nice, especially on a big screen (50'' plasma).
Refocus is also very fast on the ATV2, and looks very good too...

Call me lazy, but I have Confluence Horizontal running on every screen in the house (2 HTPC, 2 ATV2) and have no complaints.
I use neon and it works great on the atv2.

Hey Eric,
I suggest you resize your fanart to 960*540 px, the speed gain is significant. To do this, simply add this line to your advancedsettings.xml, reboot atv2 and rescan all your videos libraries :
<fanartheight>540</fanartheight>
I think Transparency! is the best one so far that I've tried.
I've been using Quartz and it works amazing.
I just switched to Quartz and I agree. AMAZING!

Personally I'm purely using Confluence because I'm using nightlies. Will try other skins when there are other stable releases.
