Can you just "upgrade" with a new livecd? My system is highly customized and I also have all the media on the same hdd...

In that case you would be better off dropping to a terminal or using ssh and upgrading XBMC that way.
Not sure if the nightly PPA is added by default in Live but I'd guess so, if it is it would just be a case of ;
sudo apt-get update
sudo apt-get install xbmc-live xbmc
IIRC that should pull down any new required packages to accompany the newer builds

Be aware this stuff is highly experimental and no support is given. versions should stabilize more once I get my hands on a AMD Fusion system.

The nightlies are not there by default.
Am I supposed to just use the "unstable" ppa? or is there another ppa I should use?

... will this build work with an ASRock Z68 Extreme4 / 2600K / ATI 6970 ?
I tried the 10.1 XBMC-Live, but it doesn't work on my system.
