Can I have menu options for different profiles? (ie master profile has everything, manager profile doesn't have settings option, or can add source, but can create play lists and user profile is limited to just playing play lists/ songs)

not really no unless the skin can set them as removable or add them in the gui which it can't

sure it is, but if your trying to use the same one for all you will have to make multiple copies of it and rename the folders and edit the addon.xmls so they appear to xbmc as separate skins
