In your case you want to disable make sure its unchecked then Save for all videos will save this option for all videos :/

I suppose it depends on what kind of subs you are working with?

If your video source is a container file and it contains subtitles correctly added, or if you're using a separate sub/idx subtitle file, then xbmc OSD should be able to turn them off. If your video has them hardcoded into the video, then there's nothing you can do.
