Is it possible to capture the streams from plugins? I've been searching and I can only find information regarding live TV capturing.

Youtube plugin can download the video (you have to dig into youtube settings on plugin.
As for other plugins idk you would have to ask in the respective plugins development/release pages at http://forum.xbmc.org/forumdisplay.php?fid=27
