Can I point the music player to say my 'my music' folder and have it play random tracks from all the folders below 'my music'?
Alternately do I have to build a new folder with copies of my tracks in it?

Yes you can do this on any folder.
Go to the folder in question then either:
1) bring up Context Menu and select Queue Item
or
2) use the keyboard shortcut "Q" or remote equivalent to Queue
Then go to either Now Playing or bring up the OSD Music controls and select Shuffle.

Aternatively if the Music contained in your folders is scanned into the Library then you can create either a SmartPlaylist or Party Mode Playlist.
