While playing a video being up the OSD and from there is an option for "Enable Subtitles". Then untick that and set it to default for all films. More info here if needed:

As for deleting a video. Bring up the Context menu on the film ('c' on the keyboard) then scroll down to "Remove from Library". Like in the screenshot here:

EDIT: Just a note for anyone from XBMC dev team or close to there, I swear subtitles are enabled on default when you install XBMC. How come? Doesn't seem neccesary or is this an accessability feature? Just realised as I was writing this answer.
Well it's either that or constant 'how do I turn subs on' threads. (Not a dev )

Yeah I don't know why I didn't think of that, very good point!
In the past people would only have a sub file or track if they wanted to use it. Now it's more common to just have sub tracks in a file, even if you don't need them.
