I just wondering over settings => system => video output there is an option to change the stereoscopic mode for the skin

But I can't find any reference over the wiki so a 3D skin should be possible right?
Any ideas where to fond any documentation

no, 3D skins are not possible yet. The setting is only there so that you can force XBMC GUI into stereoscopics mode incase you need it for your HW setup (or to disable it in case something went wrong and you're trapped in stereoscopic mode).

Edit, actually some transformations in skins should/could have a depth perception, but skins can't control the z-index/depth of elements yet
