i am working on a project with XBMC and i was asked to check first if XBMC Framework can support adding new Add ons like Skype , Facebook ...etc

and if we can change the Theme of the XBMC to be more like iphone theme

I suppose you could create a skin (what you called a theme) for XBMC that looks more like an iPhone interface. Unless you're really familiar with th XBMC skinning engine, you will definitely have a great deal of work ahead of you though. Addons for XBMC are written in python. If there are python libraries out there for Skype, then you have a shot at it. I think there is an addon to show Facebook photos, but if you're trying to recreate the entire Facebook experience in XBMC, you're going to, again, have a great deal of work to do.
