I have 2 monitors and would like to run 2 separate streams through sportsdevil on each of them and can't figure out how. Is this at all possible?

Not out of the box. XBMC is not a mulch-tasking program with multiple iterations launched. I don't believe that add-on is supported on this web site regardless.
