No jailbreak necessary. Just use AirPlay mirroring from the Mac to the ATV2/3. There is some quality loss, but it's surprisingly minimal. Just remember that mirroring is capped at 720.

Don't want to jailbreak it as it functions playing videos off iTunes.
I've an old iMac and although airplay works from iTunes. I can't see any way of telling it to mirror the screen when xbmc is running.
Is there a setting somewhere?

Apple doesn't natively support airplay mirroring on older macs, but sometimes you can enable it using AirParrot: http://www.airsquirrels.com/airparrot/
I use it on my 2009 Macbook Pro, and it works quite well.
