I would like to know, in which configuration file is stored the aspect ratio of the player. I want to set it to 16x9 by default, i'm still looking but didn't find it yet

That's stored in guisettings.xml once you saved video settings for all movies.

in guisettings.xml :
for 16x9 :

<viewmode>4</viewmode>
<pixelratio>1.000000</pixelratio>
