Not sure if I'm missing something, but--

Is there a way to set the default view type for all addons and areas within all of Kodi? (eg: I'd like to use the "Media Info" view in Arctic Zephyr for everything wherever possible, without having to manually set it for every different screen.)

No. At least not when add-ons are involved, because add-ons can store their own view mode or even have their own view mode defaults/preferences.
