I have an old PS2 console - can I use this to install the software and then connect to a TV and internet and be up and running?
No. Nor a ps1, ps3, ps4.
You can install xbmc4xbox on an original xbox.

It is not entirely true that you cant install kodi on a ps2.
You cannot install it directly, HOWEVER! You can install linux onto a ps2 and then install kodi on linux.

NOTE!! This is not a simple 1 hour or less project.

I fail to see how this is relevant to an real world application, besides the purely academic value. Software OpenGL on a totally outdated, exotic platform - really?
Do PS2s even connect to the internet?
I think the slim had ethernet
