I want to organize educational course ware and was wondering what might be the best solution for this?

I thought about using the TV  naming structure as the course ware has multiple videos per course but I do not want them to be mixed in with my TV shows.

Is their a way to organize personal videos with chapter structure like the Tv show section does?

Yes there is.

Save your videos in the standard TV Show folder and file structure
Use nfo files to create the required metadata for your videos using the TV Shows part of the media manager... http://kodi.wiki/view/NFO_files
Ensure they are all saved into a separate Kodi Source. Don't mix it into the same folder as your regular TV shows.
Then follow one of the methods listed here... http://kodi.wiki/view/Custom_home_items
