How can one make TMM rename ae to ä, ss to ß, oe to ö, etc.?
we only support to do replace non ascii characters

ä => ae
ß => ss
...

if you want it the other way, you need to get your meta data the right way (the renamer will take and use them as they are without changing)

What is the right way?
scrape it with tmm?
this is what is for
So first download /scrape the data and after rename, not vice versa.
yes - the renamer uses the movie meta data to generate the file/folder names

maybe have a look at this video https://www.youtube.com/watch?v=rM9IlYy6FMM
Thank you very much for the links!
Yes, the scraping and after the renaming work very well. Does TMM read info / nfo files, e.g. movie.nfo supplied with a movie to correctly scrape movies? Should one (or TMM) remove these info files after scraping / renaming and after TMM has created an own one?

There often are files in the movie's folder to be deleted, like a short sample video, rar files (being unzipped already), etc. Can TMM delete them when renaming? E.g. remove all of the files having "sample" in its names (being not bigger than 40 MB or so) or the extension txt.
