Hello, I am currently using the estuary skin but I would like to install some other skins but they ask to change some settings that I don't want to change in the estuary skin. Is it possible to change the settings on the new skins but not on estuary ? Or better, different settings on every skins ?

All skins have their settings so I don't know why some are asking to change them.
There are skin settings (skin unique), and general Kodi gui settings (shared). One way to deal with this is to create a profile and use the secondary skin in that. The general Kodi gui settings can be profile-unique.
A common general setting is the skin font. When you switch skins typically the font will reset to the skin default.
