Currently it is not possible to exclude specific add-ons from showing up in the add-on update list.
It is indeed possible to disable auto-update for specific add-ons via
Add-ons > My Add-ons > (navigate to the add-on) > Information > Disable "auto-update"
but this requires auto-update being enabled globally (which is not being wanted necessarily anyway) and does not exclude the specific add-on from showing up in the add-on update list anyway.
Which can be very annoying if there is an add-on that should be prevented from being updated in any way, which could also happen accidentally for example by random family members that are not aware.
Currently it is only possible to accomplish this as a workaround by messing around with the according addon's addon.xml file as described here:
