On the Kodi app on my PC I  can goto Settings > Display > Display Mode to Windowed. 
But on my android Box this option is not available. So how would minimize the screen.

You don't - it's Android.

press the home key and kodi will go away, since android doesnt have a taskbar to minimize to there is no minimize
