is it possible to add list view when using files mode and not the library (like in stock or original AZ skin)?
I can't seem configure it like that and see only 'tile'-based views with minimal information.

Might be a dumb question but Is it normal for some option to be available on one device and not another? For ex, on my firestick I can change the “wall orientation” between horizontal/vertical but the option is not there on my MacBook.

This option depends on your screen resolution.
You can only choose a vertical wall if your screen resolution has an 16:9 aspect ratio e.g. 1920x1080 (FHD) or 2560x1440 (2K) or 3840x2160 (4K).
That's because the skin is designed for 16:9 but gets away with working okay for other aspect ratios by only having views which expand on the horizontal axis. So a vertical wall would have weird alignment issues.

I'm trying to get HdrType and AudioCodec to be like yours. Everything to the right of AudioCodec would then be like the pic below.

On a locked Android system (>=11), such as the Firestick 4K Max, you need to enable Kodi's access to all files (in the Firestick settings) and then add a source in Kodi's file manager:
special://home
This way, you will have access to all Kodi files (from its file manager).
You select the file, copy it to an unprotected Android folder (for example, Download).
You then download it to your PC and modify it.
To upload it back to Kodi, you follow the reverse process.
