I've got XBMC Live running on an Acer Aspire Revo and I would like to do VNC into the XBMC.

Any ideas on how to do that ?

I'm a 24 hours linux nOOb, so please bear with me.

It depends what you want to do. Do you want to access the XBMC GUI or do you want to have a background session?
1) Access the XBMC gui with VNC. I do not think it will work well....peformance etc.
The default ubuntu vnc server is vino it is easily added with:
sudo apt-get install vino.
To config it with out a desktop might be a challange for you.

2) Access a background desktop session. This makes more sense and this is what I do.
This is possible with vnc but not with vino. vnclight or vnc4server works but unless you accept to init the session from ssh it is a bit complicated.
It is easier and better to use NX server.

All this is possible from the live but it may be easier for you to learn if you start with a full ubuntu desktop.
