Pressing 'A' on a keyboard when playing a movie brings up an Audio Offset slider. Much quicker and more convenient than navigating through the OSD menus. However, I can't find where this is referenced in keymap.xml.

Where is this key defined, exactly?

In keymaps/keyboard.xml. It'll be in the FullscreenVideo section.
