How do I get tv shows like 24 to show up and be scraped?
How should I be naming the folders and files?
There are multiple episodes on each disc and I rip them in to Audio and Video folders using DVDfab.

my TV show format is
TVshowNameFolder
+---S01E01-The episode1 of Season1.avi
+---S01E02 -The episode2 of Season1.avi
....

works fine with no extra effort (thetvdb.com) and shows in library correctly.

Don't mean to be rude guys but the OP has already stated that he rips to DVD format - therefore either suggestions are useless unless he changes his ripping regime.
I would suggest, that unless there is a specific reason to rip to the DVD format, that you might consider using MakeMKV (
http://www.makemkv.com/) pure 1:1 copies (allowing rip of only main movie - therefore saving space) and being in an mkv container you can name in either of the formats suggested. Played in XBMC there is no restriction on chapter support, ff and rew and an exact copy to boot.
can you burn a mkv file to a dvd and have it play in a regular dvd player?

also use following file setup which works for me

Not that I'm aware of - but have a look over at Doom9 forums, they are far more knowledgable about ripping/encoding for playback.
