I have some mkvs with multiple languages and english is not always played by default. I go in the audio settings and change it and tell it to set as default but when I leave the movie and restart it it goes back the original language.
I think you have set the default soundtrack language for all Windows Media files and DVDs. And set the default soundtrack language for all Windows Media files and DVDs, you also can select the language which you like.

At this moment xbmc won't select any default language by default (it will just the first in the stream). There is a trac ticket with some preliminary fixes for it, but it has stalled for the time being.
