I can see that there are various test-builds. Besides the python-3 one which obviously has python 3 interpreter, what is the purpose of the other ones, for instance the ffmpeg? Does it mean that the ffmpeg executable is exposed to python addons?

You shouldn't use those unless specifically asked to by a Team member, they are used to the Team to provide test builds for a new feature or a fix, as not all Team members have build environments setup it allows wider testing amongst Team members, obviously if we require user testing then we will publicise the builds.
