Ok Memphiz, I think I might have something here:
This is in conjunction with an XBMC 13.2 build with built in Bonjour annoucements disabled in the source as you described earlier.
For me at least my iPad is immediately and always detected as a video device and both video (tested with Instacast) and Audio (tested with Spotify) appear to work. The mac address is the valid one.
I haven't done extensive testing nor have I tried it on an iOS7 device yet as I don't have one handy. But it's a start. It even seems to hand off gracefully when switching between video/audio apps. The only issue I see is the mirroring switch still appears. (And must be left turned off)
How did I come up with the strange combinations of parameters above ? Lets just say it was a bit of manual fuzzing of the individual parameters
